Mini Egg Bites
Hi friends!
I'm just a mama looking for all of the {simple} little breakfast options I can get my hands on. Anything that makes my mornings a little bit easier with three little ones, yes please! So here's another simple recipe coming at you... I was looking for a healthy little grab-and-go option for breakfast this week for the kiddos and myself:: insert mini egg bites. This was my first attempt at making these and it definitely won't be my last. They were SO easy to make, not to mention delicious! This is a simple breakfast/brunch idea you can easily reheat and enjoy throughout the week... because we all know we are spending lots of extra time at home these days! I'll share the recipe below. Mini Egg Bites
Ingredients:
Sausage {browned}
Hash browns {browned}
1/2 cup of shredded cheese
Veggies {I used spinach, would be great with mushrooms or red peppers, too}
6 eggs {beaten and stirred with salt and pepper}
I browned my sausage first and used store-bought already cooked hash browns. This made the recipe one step easier for me! I used about half the bag of hash browns, so you'll have leftover potatoes and a little extra sausage too, depending on how full you decide to make your egg bites.
Spray muffin tins with oil so egg bites do not stick to the pan. I layered each tin with meat, potato, cheese and spinach... and then topped with the eggs. I honestly just eyeballed all of this, so I added enough egg to each muffin tin in hopes that they wouldn't overflow.
Bake at 400 for 20 minutes, until egg is cooked through and not runny. Pop the eggs bites out of the baking tin and enjoy! Or store in a container so you can eat on them throughout the week. These are really simple and super tasty!
This makes 12 mini egg bites... Top with hot sauce or salsa and enjoy! These are great for breakfast, brunch, or even for a snack!
