Simple Veggie Quiche
Hi friends! It's feeling like sweet summertime lately, our weather has been beautiful. So I'm pulling out all of my favorite spring and summer recipes... this quick quiche is one of those, so I thought I would share.
I enjoy making healthy and fresh options for my family that we can eat on throughout the week. This quiche is one of those recipes... and let me tell you, it's even better as leftovers! This is a great breakfast, brunch or lunch option:: you can easily add a side of greens or fruit to this, or top your quiche with a little hot sauce to add a kick} and hello quick meal. YUM.
I'll share the recipe below. I usually add whatever I have currently in my fridge... add your favorite veggies, cheeses, you name it. You can make this however you'd like! I use frozen pie crusts {they come 2 to a pack}, so I usually will buy several of these and keep them on hand in our freezer. I'll pull one out whenever we want to make a quick quiche. You could also make your own pie crusts! But this mama just doesn't currently have time for that. HA. So for today's quiche I added a few veggies and a little ham to the mix... I had broccoli, red peppers, mozzarella cheese, and some sliced ham to use up in our fridge, so that's what I went with. Simple and easy!

Quiche Recipe:
Ingredients:
Frozen pie crust Veggies {whatever you have in your fridge or freezer}
5 eggs
1 cup of milk
Shredded Cheese {enough to cover your veggies}
Directions:
Preheat oven to 400 Place frozen pie crust in baking dish
Place veggies, meat and shredded cheese into crust
Whisk together eggs, milk and salt and pepper
Add this mixture all over the veggies and cheese
Bake for 1 hour: or until egg is cooked all throughout.
Let cool and sit for 5 minutes.
Enjoy for breakfast, brunch or lunch!
