Simply Quiche
Hi friends! It's no secret that I LOVE to eat. This morning I whipped up this simple quiche and popped it in the oven. Hello breakfast and lunch for the next few days! This is the perfect leftover meal too, it warms up just as tasty.
In all honesty, some days my family and I have cereal for breakfast, or typically I'll fix eggs... but some days I'm ready for something different than our normal options, which is where I came up with this quiche recipe.
I recently stumbled across a few recipes of course on {Pinterest}, but truthfully, if I'm going to be making something for my family, I first of all need the recipe to be simple. I don't have the time to add a million ingredients into a recipe nor do I want too. It has to be SIMPLE... A mix of both fresh and frozen ingredients works best for me, and I prefer to make recipes which I already have most {if not all} ingredients on hand and in my kitchen. I usually have fresh veggies in the fridge that need to be used up, along with frozen veggies in our freezer.
This quiche hits all the marks! My hubby loves it, my little ones love it. Plus, it's something that I enjoy eating all throughout the week. You can also add whatever vegetables you please or cheese. Add a little hot sauce or salsa to the top of this too, YUM.
So the next time you're hosting family for the holidays or having friends stay over for the weekend {or if you're a mama like me and you're in need of a new breakfast/brunch/lunch idea} this is it! A simple + easy quiche. Sharing this recipe below along with a few of my favorite kitchen items.

What you'll need:
*5 regular eggs
*1 cup of milk {I use 2%} *1/2 cup of cheese {whatever you love!}
*Vegetables {I pick 2-3 veggies per quiche, this quiche has: fresh asparagus, diced frozen potatoes, frozen chopped spinach}.. I use both fresh and frozen veggies. It turn's out great!
*Frozen pastry shell {I used Marie Callendar's, in the freezer aisle and it comes with 2 shells. Perfect to save one for later!}
*Salt and Pepper, to taste
*Parsley flakes, for garnish
How to make:
1. Preheat oven to 400
2. Place frozen pastry shell on baking sheet {let it thaw for a few minutes while you assemble ingredients}
3. Layer veggies on bottom of pastry shell, then add cheese on top
4. Whisk together eggs, milk, salt and pepper.
5. Add above wet mixture on top of veggies and cheese, do not stir together, just drizzle.
6. Place into oven and bake for 55 minutes or until golden brown. To make sure quiche is done, insert fork or tooth pick into dish, fork/tooth pick should come out clean {not with liquid}...
It's done!
